UP2 My First Try Cooking Buri Daikon

 introduction

I chose a recipe called Buri Daikon from a blog called Just One Cookbook. This was my first time using a recipe from this site. I picked this dish because I often eat buri daikon at home in winter, but I had never made it by myself. I wanted to learn how to cook it from a step-by-step recipe in English.

 

My Cooking Experience

・Buri (Yellowtail)

・Daikon(Japanese white radish)

・Suger

・Ginger

・Cooking sake

・Soy sauce

・Mirin

①Cut the Japanese white radish and boil until soft.

②Salt on the yellowtail and let sit for 5 minutes.

③To remove the smell of yellowtail, it is "shimofuri" (boiled for a short time).

④ Mix water, sake, mirin, soy sauce, ginger, and sugar in a saucepan.

⑤ Put the yellowtail in a pot and boil to remove the bitterness.

⑥ Add the radish to the pot.

⑦ Cover with a lid and simmer for 30 minutes.

⑧ Cool and let the flavors soak in.

 

I followed the recipe carefully. I prepared yellowtail (buri), daikon, soy sauce, mirin, sake, sugar, and ginger. I didn’t use rice rinsing water for boiling the daikon because I didn’t have it. I just used normal water. I also learned a new method called shimo-furi. It means boiling the fish for a short time to clean it and remove the smell. I had never done it before, but the blog explained it well with clear photos. After boiling the daikon, I simmered it with buri and seasonings for 30 minutes using a foil drop-lid (otoshibuta). The smell was great while cooking, and the taste was even better. The daikon was soft and had lots of flavor, and the fish was tender.

 

Review of the Recipe

The recipe was easy to follow and helpful for beginners. The steps were clear, and the photos supported the explanations. I think the taste of the dish was close to restaurant quality. It was salty and sweet, and went very well with rice. Some ingredients like sake or mirin might be hard to get in some countries, but the recipe sometimes gives ideas for substitutes, which is helpful.

I liked the way the author gave cooking tips, like how to make the daikon tasty and how to use a drop lid. The photos and explanations made me feel more confident while cooking. I really enjoyed trying this recipe. I learned how to make buri daikon, and I also learned some new cooking methods and English words.
